This Chardonnay greets you with an enticing bouquet of fresh citrus. The nose is bright and vibrant, featuring zesty lemon and lime, juicy nashi pear, tropical pineapple, and delicate white peach.
On the palate, this wine offers a generous and medium-bodied experience. It showcases a harmonious balance between a fresh line of acidity and a creamy texture, creating an engaging mouthfeel. The flavours unfold with notes of mandarin and preserved lemon, adding complexity and depth to the taste profile. The wine's incredible textural quality is a testament to the organic grapes used in its production, which contribute to its layered and nuanced character. The organic farming practices enhance the purity and expression of the fruit, elevating the overall drinking experience.
Winemaking notes
The grapes were hand picked, chilled overnight then whole bunch pressed direct to an old French oak puncheon. The juice was allowed to gently warm and begin natural ferment on full solids. The juice underwent a slow gradual ferment over winter, with a few gentle stirs to keep the ferment happy, completing by the end of Spring.
Having completed ferment and natural malolactic fermentation, the wine settled & matured on full lees for 4 months until it was gently racked prior to bottling. The racked wine received a small sulphur addition prior to hand bottling. The wine has been allowed to rest in bottle for 6 months before it’s release.
