Our Pinot / Syrah is interlaced with juicy ripe plums with subtle herbal undertones and spice (white pepper), velvety tannins and complexity for a slightly more robust wine. Serve room temperature OR chilled.
Winemaking notes
PINOT NOIR
100% destemmed, whole berry ferment. We poured the juice over by hand, without any pump overs or plunging. Fruit was foot crushed then basket pressed to tank.
SYRAH
100% whole bunch, wild ferment. Fruit underwent carbonic maceration prior to pressing. Wine was then blended and racked by gravity before being hand bottled by us. Unfined and unfiltered. No added sulphites. Vegan friendly.
